Fiore’s Divine Roast Chicken Sandwich

We cannot thank Bill and Anne Disselhorst enough for sharing with Hometown Pasadena readers their recipe for the absolutely divine roast chicken sandwich. They have released a delectable treasure unto the world.

One 4.5 pound whole chicken
Olive oil
Kosher salt
Fresh ground pepper
Chicken broth
Homemade Fiore bread (recipe below)
Burrata cheese
Pesto of your choice (Fiore’s Walnut-Basil Pesto recipe may be found below)

005Bread Recipe:
3 cups bread flour
2 tablespoons Kosher salt
¼ teaspoon active yeast
1¼ cups room temperature water

Mix flour, salt, and yeast in a stainless steel bowl. Add water. Mix well. Knead for a few minutes to bring the dough together. Cover with plastic wrap. Let rise 16 hours. Form loaves and let them rise on a piece of parchment paper for 1½ hours until they double in size. Bake in a covered pot in a 475 degree oven for 38 minutes. Remove cover. Bake an additional 8 minutes. Let rest for 20 minutes before cutting.

Directions for Roasting Chicken:
Clean and dry the whole chicken with paper towels. Remove the gizzards from the bird. Cut the excess fat from around the cavity and tie the legs with kitchen twine. Rub olive oil on the chicken. (I do not rub olive oil or season the bottom of the chicken.) GENEROUSLY season the chicken with Kosher salt and ground pepper.

Roast chicken in a 475 degree oven for 1 hour and 45 minutes, until extremely golden brown. Let rest for 30 minutes.

Pull the breast meat from the bird. Keep chicken meat warm in a mixture of the pan juices and homemade chicken broth until it is time to make the sandwich.

Walnut-Basil Pesto
2½ cups fresh basil
¼ cup grated parmesan
1 teaspoon chopped garlic
½ cup olive oil
¹⁄₈ cup toasted walnuts

Place basil, garlic, walnuts, and parmesan in a blender. Slowly add olive oil. Season with salt and pepper.

For the sandwich:
Take two slices of Fiore’s homemade bread. Spread mayonnaise on one side of the bread. Top with roast chicken. Make sure that you pull apart the chicken and lay it evenly on the bread. Season with salt and pepper. Top with burrata cheese. Spoon homemade pesto on the burrata cheese. Cut in half and serve.
