If you follow the Pasadena restaurant scene, you probably know by now that Laurent Quenioux, currently of Bistro LQ and formerly of Bistro K, has taken over the kitchen at yet another bistro: Vertical. Quenioux is something of a wild man in the kitchen—eel sliders, anyone?—so it will be interesting to see how much autonomy will be given to his, ah, eccentric tendencies in the fairly conservative kitchen of Vertical. We’re guessing that management is looking for a balance. The chicken breast may now be served with yuzu curd, but the initial promotional campaign is so old-fashioned it seems new: a Sunday prix-fixe dinner of Cassoulet, the famed bean and meat stew of southern France, heavy on the goose fat. Quenioux, a Frenchman, is said to be a master of the dish.

For $35, you get a Salad Lardon, the Cassoulet, and either a crème brule or a pear and almond tart. Details of the menu here; it’s available every Sunday through the end of February. We can’t wait to try it.
