Julia Child, born in Pasadena 101 years ago this August 15th, 2013, had a voice we’ll always hear—slightly grating—in our ears, though her laugh, which employed her whole body, was equally unique and irresistible. And for those who have been hooked on episodes of The French Chef or even just know her from Meryl Streep’s incredible interpretation in Julie & Julia, Child’s sense of humor was self-deprecating, irreverent, and hilarious.

Vertical Wine Bistro celebrates Julia Child’s life this week by featuring some of her most recognized dishes. August 13th through 18th, Executive Chef Laurent Quenioux offers Julia’s classic beef bourguignon, creamy lemon cheesecake, and crisp arugula salad.

Dinner itself costs $39, though if a wine pairing is desired—Le Hospce 2010, Sancerre, France with the salad; 2009 Le Mas Flauzierres Gigondas, France with the beef; and 2009 La Fleur Renaissance, Sauternes, France with dessert—include an additional $25.

    I was surprised to see arugula on a menu honoring Julia Child. I thought I remembered reading that she didn’t like it and just found the following transcript from a 2002 Larry King interview:

    CHILD: I don’t like cilantro.

    KING: What is that?

    CHILD: It’s an herb that it has a kind of a taste that I don’t like.

    KING: Is there an everyday food you hate, like broccoli?

    CHILD: No, I don’t think so. I mean, if it’s properly cooked and properly served, I can’t think of anything I hate.

    KING: So you’ll eat…

    CHILD: Except cilantro and arugula I don’t like at all.

    KING: Arugula?

    CHILD: They’re both green herbs, they have kind of a dead taste to me.

    KING: So you would never order it.

    CHILD: Never, I would pick it out if I saw it and throw it on the floor

    Perhaps Chef Laurent was influenced by one of Julia’s “Cooking with Master Chefs” episode with Chez Panisse’s Alice Waters. One of the dishes Alice made was a salad with beets, blood oranges, walnuts and rocket salad (i.e. arugula), and Julia praised it. Of course, this was in 1994 versus her interview with King in 2002, so maybe her feelings for arugula evolved or dwindled. We love that Julia says in the interview with Larry that she’d pick out any arugula and throw it on the floor. Her sense of the theatric makes it so enjoyable to watch and listen to her.

    The dish we want to make tonight is Alice’s salad with thinly, thinly, thinly sliced fennel, mushrooms, and parmesan with simply salt, pepper, and good olive oil—it looked delicious!
