Paul Ragan is Executive Chef/Owner of ALTAeats, which opened last year on a quiet stretch of North Allen Avenue in Altadena. It is a sophisticated yet neighborly spot that has become a foothill favorite (despite the storefront’s lack of signage!) and is enjoying a dedicated following amid glowing reviews.
Chef Paul creates food he likes to eat, and although this readily covers the basics, his interests also extend from steak and burgers to Pad Thai, and simple street food to exotic dishes. His varied background includes being the executive chef for Derek’s Bistro in Pasadena, a private chef for a client who took him annually to Portugal, and even running a small restaurant in Madrid for five years. On Wednesday, February 12th, the Arboretum will host Fresh: Celebrating the Table with a menu of “Sunday Roastie,” which is brioche and pomegranate-stuffed (and boned) Cornish game hens, classic paella, and chocolate mousse.
