Orange Pistachio Muffins
Gluten free, lactose free, vegetarian
from Living Luxe Gluten Free

Pistachio gelato inspired this recipe. And every bit as much as the Italian delizia after which it’s modeled, my orange pistachio muffin recipe enchants the taste buds. Orange zest and sugary crumbles add a sweet touch to these nutty, buttery muffins, which go perfectly alongside morning espresso. Like anything inspired by the Italians should be, my orange pistachio muffins are easy on the eyes, and their gluten-free, lactose-free texture and taste are pleasing on the palate.

Muffins
2 cups gluten-free all-purpose flour
¾ cup granulated sugar
½ cup pistachio pieces, finely chopped
2 tsp. gluten-free baking powder
1 tsp. xanthan gum
½ tsp. salt
¼ tsp. nutmeg
½ cup lactose-free butter, softened
½ cup lactose-free milk
2 eggs
½ cup fresh-squeezed orange juice
2 tsp. orange zest
1 tsp. vanilla extract

 

 

Crumbled sugar topping
¼ cup gluten-free all-purpose flour
2 tbsp. lactose-free butter, softened
2 tbsp. granulated sugar
1 tsp. orange zest
¼ cup pistachio pieces, coarsely chopped

 

Directions:
Preheat oven to 375 degrees and line a muffin pan with paper liners.

To make crumbled sugar topping, stir together flour, butter, sugar, and orange zest. Stir in pistachio pieces and set aside.

To make muffins, combine flour, sugar, pistachio pieces, baking powder, xanthan gum, salt, and nutmeg in a medium bowl.

In a large bowl, whisk together butter, milk, eggs, orange juice, orange zest, and vanilla extract. Stir flour mixture into liquid mixture until flour is just moistened, being careful not to over stir.

Pour muffin mixture into pan, filling cups about ¾ full. Top each muffin with a small amount of sugar topping. Bake for 10 minutes, then rotate tray. Continue baking until muffins are golden brown around the edges and a toothpick comes out clean when inserted in the center of a muffin, about 8 to 10 minutes. Cool in pan for 2 to 3 minutes. Serve or transfer to a wire cooling rack.

Active Prep: 30 to 35 minutes

Note: These muffins taste best if prepared when oranges are fresh and in season. For sweeter muffins, use an all-purpose flour with rice flour. For preparation without rice flour, Bob’s Red Mill All-Purpose Flour works perfectly.
