Preheat oven to 450º.
In a large bowl, beat the eggs and cream together for 3 minutes until the mixture becomes smooth and light in color.
Add the cheeses, salt, pepper, and hot sauce. Beat until incorporated.
Pour the mixture into a 1.5 quart dish and bake for 25 minutes until the soufflè has risen and the top is a nice brown. If using individual ramekins, check after 15 minutes.
Serve warm “as is” or with fresh salsa.

- for a lighter meal, go with a salad of pink grapefruit, avocado, dried cranberries, jicama, and a raspberry champagne vinaigrette

The Spot Gourmet is just next door in Glendale. Owners Sid Burgess and Patty Fallahee combine their respective “gourmet catering expertise and consummate taste in culinary arts” to serve a holiday party, a small dinner party, a business lunch, or a wedding. They even offer take out for those nights when you’d like something delicious, but you don’t want to have to cook it.

They offer appetizers such as artichoke pesto with homemade chips, marinated pickled shrimp with lemons, red onions and spices, and proscuitto wrapped asparagus with brie. Salads samples are Salmon Niçoise, pesto chicken, and watercress and arugula options.
Brunch items include Tahoe Brunch Layered Egg Casserole, Mini Knotted Roll sandwiches, and homemade chocolate doughnuts with glaze and Oreo cookie (!!!).
Some of the entree options are black peppered ham with a very yummy mustard cream sauce (we did partake), pork loin, chicken, beef short ribs with a Barolo sauce, and a very well done pesto crusted salmon with a white wine lemon sauce (we were dipping our fork here and there).
Their sides of haricot verts sautèed with shallots and mushrooms made us want to become vegetarians, as did the sweet mashed potatoes with bourbon and butter.
The dessert options seem to never end, so start setting your boundaries or take a day off and indulge!
