Balsamic Strawberries

Apr 23, 2013

StrawberryDessert_PhotoKatWardOne the surface, this recipe has an unusual, perhaps even off-putting, combination of ingredients for a dessert, but we’re here to say that this is beyond delicious. When served with high-quality vanilla ice cream or gelato, we’d actually call it profound.

2 tablespoons balsamic
1-2 tablespoons of sugar
¼ teaspoon freshly ground black pepper
2 teaspoons orange zest or peel
1 pound of strawberries, culled and halved or quartered

Mix ingredients, adding sugar slowly to sweeten to personal taste. Cover and chill for several hours to allow flavors to peak. Serve plain or with a dollop of fresh whipped cream and/or high quality vanilla ice cream or gelato. Prepare for second helpings.

We used Trader Joe’s Acceto Balsamico di Modena ($3.99 a bottle/12 ounces)) and it works brilliantly, though splurging on Il Fustino‘s 25 Star Aged Balsamic ($28 for 12 ounces) or Beyond the Olive‘s BRCohn 25 Year Balsamic Vin ($34)—that are thick as molasses, can be blissfully enjoyed by the spoonful, and be considered a dessert all by itself—make this strawberry dish supreme.
