Chef Bruce Kalman of Union Restaurant in Pasadena and Knead & Co. in LA’s Grand Central Market is getting around. He’ll be feeding the crowd at the Seeds of Transformation garden party at the historical Robinson House on April 29 (tickets still available) and he’ll be setting up at the inaugural Arroyo Seco Music Festival in June (which could use a significant influx of female musicians, in our opinion). And he comes up with interesting events such as “Tasty Tunes,” a 3-course dinner paired with music selected by the chef—and listened to through HUSHconcert headphones. And, the first weekend of Coachella (April 14-16), Kalman will be joining the likes of Redbird’s Neal Fraser and Eggslut’s Alvin Cailan for the Outstanding in the Field event. Chef Kalman will be “on” for two dinner seating on Sunday, April 16.
But if you can’t justify the $225 price for a seat at the OITF table, how about $60 at the Arboretum’s Fresh: Celebrating the Table series. On April 5, Chef Kalman will embrace California locally sourced produce with Northern Italian cuisine.
“We use vegetable from root-to-leaf, butcher animals head-to-toe, and even stretch fresh cheeses in-house,” Kalman says. “I’m exceedingly passionate about food that is handcrafted from beginning to end.”

—Stracciatella on crostini with olive oil and sea salt
—Barley risotto with mushrooms and goat cheese
—Roasted chicken alla diavola with creamy polenta
